Le Carpaccio de Bœuf Fin Gras du Mézenc: A PDO of Excellence
In the heart of the Massif Central mountains, in the unspoiled Mézenc region, an exceptional gastronomic tradition flourishes: Bœuf Fin Gras du Mézenc. This Protected Designation of Origin (PDO) celebrates the incomparable quality of meat from free-range cattle, fed on the herbs of verdant pastures. Its tender texture and refined taste make it a delicate dish, both subtle and flavorful.

The recipe:
On a bed of thin slices of carpaccio, we generously lay Parmesan shavings, offering a touch of richness and spiciness. Fresh arugula leaves add a note of freshness and liveliness, contrasting harmoniously with the velvety texture of the meat. A drizzle of extra-virgin olive oil adds a touch of sweetness and enchanting fragrance.

The Wine: Saint-Péray 2022 du Domaine Verset
Made from Marsanne and Roussanne grapes, is the fruit of the work of Emmanuelle, who took over the Domaine in 2016. It expresses notes of acacia and white flowers, with a straightforward attack and lovely freshness. A food and wine pairing that celebrates the richness of the terroir and the expertise of passionate artisans, to the delight of food and wine lovers.
